Today was a good day, I loved the recipes and felt great. This morning for breakfast was a fruit bowl of whatever fruit I wanted. When choosing fruit for the Reset they tell you to pick fruits that are lower on the glycemic index, so fruit like bananas are not encouraged which is a bummer because I love bananas. I ended up having strawberries, cantaloupe, and watermelon. The cantaloupe I found was delicious! So juicy and sweet!
Lunch was the Nori rolls from dinner last night along with the lentil salad. I found that I couldn't eat all of the lentil salad because I was already full once I ate the Nori rolls. I can't say enough how awesome the Nori rolls are! My sister is a big sushi person so I'm excited to make these for her one night and see what she thinks.
For my snack I chose to switch out the apple for more cantaloupe (because it was so tasty) and some almonds. Simple but very filling.
Dinner was very tasty, simple, and super easy. My mom and I went to church tonight and we ALWAYS go out to lunch/dinner after church, so coming home to cook was a different experience. Reading the recipe, I kept thinking this is not much food, but once we got it all cut and cooked it was surprising how satisfying it was. Another recipe that will be a staple in my house going forward! I'm normally very picky about the texture of certain foods (onions, different types of lettuce, peppers, etc), but I've started really liking peppers. I love the smell when you first cut into them!
Tomorrow will be more of a planned day as I'm heading back home and will again be in the car for 5 hours. The only things I've been missing today have been my Shakeology, and being able to workout. My Saturday's always start with TurboKick and Bodypump, but without being able to do strenuous exercise those won't be allowed for another couple of weeks. :-( Small price to pay for the benefits I will receive over this process.
