Day 5 - Happy Easter

Happy Easter to all!  Today is such a special day and a day to reflect and be thankful for all that Jesus Christ did for us!!

I'm thankful we don't have any small kids in my family right now, so there weren't Easter baskets full of candy laying around.  I have a big sweet tooth, and I was happy to not have the temptation around today.  This morning I had baked tempeh with a piece of toast and some cantaloupe.  Not a huge fan of the tempeh made this way.  I think it was more because of the marinate the recipe called for rather than the tempeh itself.  The plan calls for baked tempeh again on Day 7 for dinner, so I'll modify the marinade to hopefully make it better.  I added a little cantaloupe as well for the sweet taste.
Being on the road again during lunch had me switching my lunch and snack so I stuck with strawberries and almonds.  It worked and kept me full Thursday so I figured I'd stick with the same combo today.
I noticed I was a little hungrier than normal when I made it back to the DFW area, so I tried to keep that in mind and not over-eat my late snack/lunch.  Due to the time of day it was and not wanting to eat dinner incredibly late, I chose to re-heat some of the black bean and rice tacos from the other day.  I had a smaller portion and it held me over until dinner.  This wasn't what was called for today, but it had to work due to the travel day.
Dinner was supposed to be miso soup with stir-fried veggies and a small portion of brown rice.  I ended up modifying this a bit.  I know for a fact that I do NOT like miso soup so I skipped that portion and omitted the brown rice because I just had some in the taco.  So stir-fried veggies it was!  I increased the portion size just a smidge, but not much.  This was delicious again and one of my favorites recipes so far!

Although I was traveling for Days 2 and 5, I still found the first few days to be pretty easy for the meals.  I'm a little worried about this week because I have several things going on at night for my last MBA class and I'm wondering how I'm going to get dinner in without eating at 5:00 pm :-)  Onto Day 6...I hope everyone reading this has a fabulous week ahead!

Remember:  One bad meal won't be the end of your goals, move on and get back on track with the next meal.  This is something I have to tell  myself repeatedly!    Stay tuned.....
