I anticipated today to be somewhat of an easier day: I was back at work and on a schedule, back in my own home and kitchen, and was feeling really good. Unfortunately, that only lasted until about lunch time and I struggled from there the rest of the day.
Breakfast was great this morning! Oatmeal with 1/2 an apple, pecans and a little maple syrup....YUM! I forgot to take a picture of it at first so this is after I had eaten about 1/2 of it :-) This was so much food and kept me feeling full all morning. Definitely a keeper going forward!
Lunch was raw veggies (carrots, tomatoes, and peppers) with a small servings of brown rice. I thought this looked like a lot of food, but I was hungry again after about 45 minutes. This led to a VERY long afternoon of constantly thinking about how hungry I was and how I didn't have enough "Reset food" at work to supplement until my snack. The only other food I had at work with me was my snack and then my dinner (I had to leave straight from work and head to a friends house for our project...always plan ahead!) so I couldn't dive into either of those without knowing that I'd be wanting something later in place of those meals. I haven't really had the sweet craving in a the past couple of days, but that craving reared it's ugly head today! I have to walk by a girl's desk at work every time I want to go to the break room/supply room and she ALWAYS has candy (the good stuff)! This was great pre-Reset because in the afternoons when my sweet cravings would come on, I knew I could swing by her desk and munch on whatever I wanted.....but the problem now is that she ALWAYS has candy....and I know it's there! I'm having to break the very bad cycle I've created of going and getting candy because my day at work is stressful, I'm bored, or because I think I'm hungry when it was probably because I was wanting water and I didn't realize it. This is the struggle I will face this week and I have a feeling it will be a tough one.
My snack was strawberries and almonds again. I had some strawberries that were about to go bad so I had to get them eaten before they ruined.
Dinner was a roasted veggie medley that was very tasty. I didn't have a beet and forgot to get one at the store so I ended up throwing in some Brussels sprouts that were still in my fridge and needed to be eaten. Added a little Himalayan salt and baked in the oven. Simple and easy...my kind of recipe!
Really liked this recipe and will continue to use it going forward. I love that I'm learning so many fun, easy, and SUPER healthy recipes with this journey!
Any questions....let me know! :-)
